Chicken and Butternut Miso Soup

Servings: 4
1 small onion, diced

1 Tbsp. garlic, finely chopped

1 Tbsp.  ginger, finely chopped

2 Tbsp sesame oil

1.5 quarts chicken broth

1 pound boneless, skinless chicken thighs, each cut into quarters

1 cup butternut squash, diced

3 Tbsp miso paste

4 oz mushroom, sliced

2 Tbsp  soy sauce

2 Tbsp chili paste (optional)

1 cup cabbage, thinly sliced

3 bok choy, medium sized, cut into quarters

Scallion, cilantro, lime for garnish

 

Directions

Heat oil in medium pot over low-medium heat.  Add onion and cook for 3 minutes. Now add garlic and ginger and cook for 1-2 minutes or until fragrant.  Add chicken, broth, miso, soy sauce and chili paste.  Bring to a simmer, cover with lid and cook for 10 minutes.  Now add squash, mushrooms and cabbage and cook until tender and chicken is cooked through.  Taste for seasoning.  Serve and garnish sliced scallion, cilantro leaves and lime wedges.
