Southwest Vegetarian Burger

Ingredients:

1 C Brown Rice

1 C vegetable stock

1 C tomato juice

2 T dark chili powder

2 T C cumin

1 T dried oregano

Salt and Pepper

½ C chopped green chilies

2 C beans, cooked (preferably pinto or black)

¼ C scallion, thinly sliced

1 bu. Cilantro, chopped

EVOO (Extra Virgin Olive Oil)

Lettuce, tomato and avocado

 

Directions:

Preheat oven to 350 degrees.  In a medium pot add stock, tomato juice, spices, oregano, salt and pepper to taste.  Bring to a boil then simmer for 10 minutes.  Place rice into an oven proof pot or pan.  Add hot broth, cover with foil or lid and bake for 40 minutes.  Remove rice from the oven and let sit for 10 minutes, then fluff with a fork.

While still warm, add the rice in batches to food processor and pulse until it forms into a dough-like consistency.  Place into a medium sized bowl.  Add remaining ingredients to the rice, except for the oil and mix well.  Form into 8 patties, then place onto oiled baking sheet using EVOO.

Bake for 15 minutes and flip patties over.  Turn pan and bake for an additional 15 minutes.

Serve on bun with Lettuce, tomato and avocado.
